Pecan Raspberry Coconut Dainties

Healthy eating doesn't have to be restriction based misery and boring food!

Pecan Raspberry Coconut Dainties 

Ingredients:

Dainties:

  • 2Tbs Pecan meal

  • 2Tbs Unsweetened Shreaded Coconut 

  • 1tsp Psylium Husk

  • 1Tbs Extra Virgin Olive Oil

  • 1/4tsp baking powder 

  • 1 Egg

Filling:  

  • 6 Raspberries

  • 1/2Tbs Cream Cheese

Directions:

  1. Mix all ingredients for dainties

  2. Cut cream cheese into 4 pieces

  3. Spoon half the batter into cake pop maker, 

  4. Add 2 Raspberries in 3

  5. Place the 4 Cream Cheese pieces in the remainders

  6. Fill cake pop maker with remaining batter, cook until browned on one side and gently flip

  7. Cook until brown

  8. Cool

Optional Topping

Ingredients:

  • 1Tbs Pecan Meal

  • 1Tbs Unsweetened Shreaded Coconut

  • 1/2tsp Coconut Oil

  • 1tsp Monk fruit Sweetner

Directions:

  1. Mix together

  2. Toast in 350F oven until browned

  3. Sprinkle on Dainties
