Raspberry-Mint Unicorn Mug Cake

When I first started Keto in April 2017 I sat down and made a list of all the foods I would never eat again. I mourned those foods and punished myself for wanting to be healthy.

This is definitely step one - "how to despise your new lifestyle"

After months of being miserable,  a thought finally occurred to me...

Maybe I can make a healthy version instead of depriving myself!

That was the day that changed my life forever. In that moment a "diet" I hated became the sustainable lifestyle I love.

Healthy doesn't mean boring anymore!

Raspberry Mint Unicorn Mug Cake

Ingredients:

  • 1/3 Cup Freash Raspberries 

  • 4-6 Fresh Mint Leaves cut small

  • 1Tbs Sweetener (to taste)

  • 4Tbs Walnut Meal

  • 1/2tsp Baking Powder 

  • 1Tbs MCT Oil 

  • 1Tbs Sour Cream 

  • 1 Egg

Directions:

  1. Mash mint and raspberries together

  2. Combine with other ingredients

  3. Split into 2 Ramikins 

  4. Microwave 90 seconds

Creme De Menth Glaze 

Ingredients:

  • 1Tbs Cream Cheese 

  • 2Tbs HWC

  • 1Tbs Sweetener of Choice

  • 6 Drops Creme De Menth flavor extract 

Directions:

  1. Combine all ingredients

  2. Whip until smooth 

  3. Top with Sugar Free Sprinkles
