"Pineapple" Upside Down Mug Cake

Retro foods are all the rage and a not-so-secret ingredient transforms this retro dessert into the perfect low carb masterpiece

"Pineapple" Upside-Down Mug Cake

Glaze

Mix together:

  • 1Tbs Melted Butter

  • 1Tbs Zuga Sweetener

  • Pineapple Flavor Extract

Line the bottom of 2 ramekins

“Pineapple”

  • Zucchini slices to cover the glaze on the bottom of your 2 ramekins.

  • Optional * scoop Zucchini colour red for faux cherries

Coconut Mug Cake

Ingredients:

  • 2Tbs Shreaded Coconut

  • 1Tbs Coconut Flour

  • 1/4tsp Baking Powder

  • 2Tbs MCT Oil

  • 1Tbs Zuga Sweetener

  • Cake Batter Flavor Extract

Directions:

  1. Mix ingredients together thoroughly

  2. Cover glaze and zucchini

  3. Microwave 90 seconds or Bake 300° 25-30min

  4. Tip over onto serving plate
